450 gm Rhubarb - sliced, (1lb)
Grated rind and juice of 1 orange
75 gm Caster sugar, (3oz)
75 gm Ground almonds, (3oz)
50 gm Demerara sugar, (2oz)
Instructions:
Instructions: Place the rhubarb, orange rind, juice and sugar in a large pan and simmer gently until tender. Meanwhile mix together the almonds, sugar and Ground Coriander. Place the rhubarb in 4 ramekin dishes and top with the almond mixture. Place the dishes under a hot grill until the topping is brown.

Watch carefully as this will only take a matter of minutes.
