Ingredients:
Amount Ingredient
1/2 lb country style pork ribs halved crosswise cut into 1 or 2 rub portions
1 tbl cooking oil
2 med potatoes 1/2" slices
2 med carrots 1/4" slices
1 med onion thinly sliced
8 oz canned sauerkraut rinsed and drained
1/2 cup apple cider
2 tsp caraway or fennel seeds
1/8 tsp ground cloves
1 tbl flour
2 tbl water
1/2 lrg apple thinly sliced
salt and pepper to taste
Instructions:
Instructions: Brown the ribs on both sides in the oil over medium high heat. In a 4 quart crockpot, combine the potatoes, carrots, onion, sauerkraut and ribs. Stir together the cider, seeds and cloves; pour over the sauerkraut.

Cover and cook on the low heat setting for 8 to 10 hours or 4 to 5 hours on high heat. Remove the meat and vegetables to a platter, reserving the drippings in the pot and tenting the platter to keep it warm. Strain the juices into a glass measuring cup and skim off the fat.

To make the gravy, pour 1 cup (4 servings) for the juices, adding water if necessary, into a sauce pan. Stir together the flour and water. Stir the mixture into the juices in the sauce pan. Cook until thickened. Stir in the apple and cook until heated through - about 1 minute. Season with salt and pepper. Stir in the parsley just before serving.
