Instructions: Prepare Dessert Rice as directed, but replace egg yolks with whole eggs beaten until foamy.

Place rice mixture in a buttered ovenproof baking dish. Sprinkle with 3 tablespoons granulated sugar. Place under broiler flame for 5 minutes, or until sugar turns brown. Serve hot.

Suggested Wine: Chilled Bordeaux Sauternes; chilled sweet Semillon.
