1 x 6 oz. package long-grain and wild rice mix
2 x 10 oz. package frozen chopped spinach - thawed
2 cup shredded Monterey Jack cheese
1/4 cup butter -- melted
3/4 tsp dry mustard
1/2 tsp salt
1/2 tsp onion powder
Instructions:
Instructions: Cook rice according to package directions; set aside. Press spinach between paper towels to remove excess moisture. Combine rice, spinach, cheese, butter, mustard, salt, and onion powder; season to taste with salt and pepper. Spoon into a lightly greased 2-quart shallow baking dish. Cover and bake at 350 degrees for 20 to 30 minutes.
