Ingredients:
Amount Ingredient
2 can (small) diced cooked chicken (or 1 and 1/2 cup diced cooked chicken)
1/2 cup Uncooked rice (I use uncle Bens long grain)
2 tbl Butter or margarine
1/2 cup Hot water
1 cup Frozen peas
1 can Sliced mushrooms (or 1 cup fresh)
1 can Sliced water chestnuts - rinsed & drained
1 can Cooked sliced carrots (optional)
Instructions:
Instructions: Saute rice in butter until it turns white. Add remaining ingredients, and stir. Bring to a boil. Cover tightly, and simmer for 20 min, or until done.

Makes 7 cups. Freezes well

* You can just put the rice & pasta from the box away and add it to the kids soup someday, or something.
