Instructions: Place asparagus over boiling water, cover and steam for 1 1/2 minutes. Set aside. Cook noodles in boiling water for 1 1/2 minutes. Drain, rinse under cold water, and drain again.
In a large serving bowl, combine lime juice, ginger, oil, salt, pepper flakes, ground pepper, and garlic. Add asparagus, shrimp, cucumber, lettuce, green onions, cilantro and mint. Add noodles and toss to thoroughly distribute all ingredients. Sprinkle with peanuts and serve. NOTES : I think I found this in a Cooking Light magazine several years ago. Its true that its cheating slightly - you will have to steam the asparagus very briefly and boil water for the noodles, although if you dont want to actually cook them, you could just soak them in hot water until theyre soft, then drain. It has such good flavors for a summer meal, though, that we thought 90 seconds of cooking would be worth it. - Lauren Email this Recipe:
