4 cup uncooked long-grain white rice
5 oz Craisins (dried cranberries) OR 1 1/3 c. golden raisins OR a combination
1/4 cup dried apricots chopped (1 6-or 7-oz. bag)
1/4 cup dried minced onions
1/4 cup chicken bouillon granules
1 tbl sugar plus
1 tsp sugar
1 tsp ground white pepper
1 tbl curry powder plus
Instructions:
Instructions: Makes 4 mixes; each serves 6.

Pack this mix in small jars or in plastic bags inside colorful cloth bags.

Note: Small jars of dried minced onions are found in the supermarket spice department.

Combine all the ingredients in a large bowl, mixing well. Pack 1 3/4 cups of mix into each of four containers and close tightly. Store at room temperature.

Attach this note to each container:
Rice Pilaf: Combine rice mix, 2 1/4 cups of water and (if desired) 1 tablespoon of butter or margarine in a medium saucepan. Stir and bring to the boil, stirring once or twice. Reduce heat to low, cover and simmer 15 minutes, or until rice is tender and liquid is absorbed. Fluff with fork.

Serves 6.
