Ingredients:

1/3 cup Raisins Or
Dried Apricots, Coarsely Chopped
1 cup Uncooked Basmati Rice
3 cup Nonfat Vegetarian Broth Heated
1 cup Chopped Onion
1/2 tsp Cinnamon
1/2 tsp Ground Cumin
1/2 cup Peeled, Coarsely Grated Carrots
Instructions:
Instructions: Soak dried fruit in water for 10 min. Drain and set aside.

Cover rice with cold water and soak for 1 hr. Drain and set aside.

Bring vegetable stock to a boil in a med saucepan. Reduce heat to med.

Ladle 1 C of stock into a saute pan and add onion. Simmer until onion is soft and translucent, about 15 min. Add spices and cook for 1 min. Add carrots, orange peel and rice and cook for 1 1/2 min.

Add remaining 2 C stock and raisins. Cover pan, reduce heat and simmer until liquid is absorbed and rice is tender, about 20 min.

Remove from heat and let stand covered, for 10 min. Fluff with a fork and serve warm.
