3/4 cup short grain rice
1 cup milk
1/4 cup heavy cream
4 tbl brown sugar
Pinch of grated or ground nutmeg
2 tbl fresh mint, chopped
1 tsp vanilla extract
2 tbl chopped toasted hazelnuts
----------------- For sauce: ----------------
1 cup raspberries, fresh or thawed if frozen
2 tbl confectioners sugar
Instructions:
Instructions: Mix rice, milk, cream, sugar, nutmeg, mint, vanilla and nuts and spoon into 4 molds. Cover with pleated foil and secure with string. Place molds in steamer tiers, cover with lid and steam for 1 hour over boiling water, or until set.

Meanwhile, puree sauce ingredients in a food processor or blender until smooth.

Press through a sieve to remove any seeds. Turn puddings out onto serving plates and spoon sauce over. Serve immediately.
