Instructions: Mix rice, milk, cream, sugar, nutmeg, mint, vanilla and nuts and spoon into 4 molds. Cover with pleated foil and secure with string. Place molds in steamer tiers, cover with lid and steam for 1 hour over boiling water, or until set.
Meanwhile, puree sauce ingredients in a food processor or blender until smooth. Press through a sieve to remove any seeds. Turn puddings out onto serving plates and spoon sauce over. Serve immediately. Email this Recipe:
