Ingredients:

2 x pheasants, (2 1/2 lb.)
1 tbl salt
1/2 cup long grain rice
3 cup water
1/2 cup butter or margarine
1 cup celery, finely chopped
3 tbl onion, minced
1/2 cup fresh mushrooms, sliced
1/8 tsp sage, crushed
1/8 tsp thyme, crushed
1/8 tsp savory, crushed
6 slc bacon
Instructions:
Instructions: Rub 1 teaspoon salt into cavity. Brown rice in frying pan. Transfer rice to a saucepan; add water and 1 teaspoon salt. Cook until tender. Melt butter in frying pan; add celery, onion, mushrooms, and cook 10 minutes.

Add to rice along with herbs. Stuff birds lightly, truss, brush with melted butter and place bacon across breasts. Roast at 300 degrees for 2 hours. Baste frequently.

Serves 6 to 8.
