1 x green pepper diced
1 sm onion diced
1 can corn
3 med carrots diced

Instructions: I sealed the cavity after stuffing with the neck and giblets and pinned it together with a few toothpicks. It was very colorful and tasty! Also, I would not recommend putting much, if any at all, of the leftover stuffing in the crockpot outside of the bird. I did do this... the rice mixture came out extremely mushy and the drippings were no longer good for making gravy. Oh! And also, I dont care for my seasoning vegetables (peppers, onions, etc) to be chunky, so I did use my food processor to, well, almost puree them. :)

NOTES : On Christmas Eve, I made a chicken in the crockpot. As my husband does not care for the usual bread stuffing I decided to create my own stuffing. I improvised on a stuffed pork chop recipe that I got from one of the lists, stuffed the not-quite-thawed chicken with it, and let it cook for about 6 hours on high with just a dry gravy packet and water covering most of it...it was a hit.
