Instructions: Bring the nce to the boil in an ovenproof pan of salted water on the boiling platethen transfer to the simmering ovenfor 15 to 20 minutes (12 minutes for basmati) or until lust cooked.
Drain and cool quickly. Cut apricots into strips. Chop the nuts and shallots. Heat oil and add shallots or onion. Cook in the simmering ovenwith the apricots for 5 to 7 minutes until soft. Leave to cool then add the rice pistachios herbs and egg. Mix season well and chill until required. Place in a shallow ovenproof 1 litre dish and cover with foil. Bake in the simmering ovenfor 15 minutes then transfer to the roasting ovenfor 30 minutes when the turkey is placed in the simmering ovento rest while you make the gravy etc. Do not stuff the centre cavity of the turkey with stuffinng particularly rice stuffing when slow roosting as there is an increased nsk of food poisoning.
