Ingredients:

7 oz Long-Grain Rice
4 oz Feta cheese, Crumbled
1 cup Chopped green pepper
1/2 cup Chopped onion
1/3 cup Pine nuts, toasted
1 x 2-ounce jar diced pimiento,
Drained
1/4 cup Olive oil or salad oil
2 tbl Tarragon white wine vinegar
Instructions:
Instructions: Cook rice according to package directions, using 1 teaspoon salt; cool slightly. In a large mixing bowl stir together cheese, sweet pepper, onion, nuts, and pimiento; add cooled rice.

For dressing, stir together oil, vinegar, and black pepper. Pour over salad and mix well.

Refrigerate until chilled or for up to 24 hours.
