1 can chopped green chilies, (4 oz.) drained
2 cup sour cream
1 tsp salt
3 cup rice, cooked
8 oz Monterey Jack cheese, grated
1/8 tsp pepper
Instructions:
Instructions: Combine chilies, sour cream and salt. Set aside.

Place 1 cup cooked rice in bottom of 1 1/2-quart casserole dish. Spoon 1/3 of sour cream mixture over rice. Then top with 1/3 of the cheese. Repeat this twice. Sprinkle with pepper and dot with butter or margarine.

Bake at 350 degrees for 20 minutes, covered. Uncover and bake another 10 minutes. Do not over cook as texture will change and rice will be dry. May be frozen unbaked.

Serves 6-8.
