4 med bell peppers diced
1 tbl olive oil
1 med onion -- chopped
1 cup celery diced
3 clv garlic minced
1 sm zucchini diced
1 cup carrots diced
2 lrg cans tomato juice
1 can diced tomatoes with juice
1 tsp Italian seasoning
2 cup cooked brown rice
1/8 tsp black pepper
Instructions:
Instructions: Heat oil in a large nonstick skillet over medium heat. Add onion, carrots,peppers and garlic and saute until onion softens, about 3 minutes.

Stir in zucchini, tomato juice, Italian seasoning and salt. Bring to a boil, reduce heat and simmer for about 15 minutes. Stir rice into pepper mixture.
