3 lb beef chuck roast browned, drained
1 tbl cooking oil
8 lrg carrot peeled, halved
1 lrg onion quartered
2 x garlic cloves minced
1 tbl Italian seasoning
1/2 oz diced tomatoes
6 oz tomato paste
1 tbl brown sugar
1/2 tsp salt
1/2 tsp freshly-ground black pepper
Instructions:
Instructions: Brown all sides of roast in hot oil and drain. Place carrots and quartered onion in bottom of crockpot and then add roast.

In a mixing bowl combine tomatoes, tomato paste, Italian seasoning, garlic cloves, brown sugar, salt, pepper, and bay leaf. Pour mixture over roast. Cook on LOW for 8 to 10 hours. Remove bay leaf before serving.

This recipe yields 8 servings.
