Instructions: Mash the bananas. Beat in the ricotta cheese, sugar and eggs. Sift the flour with the salt and bicarbonate of soda and gradually mix into the banana mixture. Stir in the nuts or fruit. Pour into a greased and lined 2lb/1kg loaf tin and bake in a preheated oven at gas mark 4/180C/350F for about 1 hour or until skewer comes out clean.
