Instructions: Gather a brush pile sufficient to make a good bed of coals. Mesquite is the best, but any wood, except cedar, will do. About 4 trees should do it. Start your fire and keep adding wood. Dig a pit, preferably in the sand, 6 feet by 4 feet by 4 feet deep. Kill the goat, hang it from its hind legs and clean it. Cut goat into rib cages, loins, and quarters and wrap in a double layer of heavy-duty aluminum foil.
Shovel 3/4 of the coals into the pit. Top with a piece of sheet iron, then top that with the wrapped goat. Cover with another piece of sheet iron. (Its very important that all the galvanizing has been burnt off of the sheet iron.) Cover with the rest of the coals, then with 18 inches of dirt, leaving vent holes in the corners. It will look like a doodle-bug hole where its smoldering. Leave 6-8 hours. Unearth. Baste with your choice of above and grill over open mesquite coals until desired color.
