Instructions: Combine cooking oil, vinegar, mustard, thyme, salt, pepper, and garlic; mix well; reserve.
Cook unpeeled potatoes until tender; drain. Cool to room temperature; peel and cube. Cut beans into 1-inch pieces; cook until tender crisp; drain and cool to room temperature. Combine potatoes, green beans, and onion; cover and refrigerate until cold. Before serving, place lettuce in salad bowl; top with vegetable mixture. Place Spam in center; sprinkle olives over top.
