Ingredients:

12 x apricots
2 x fingers of ginger peeled and finely julienned
150 gm demerara sugar
Instructions:
Instructions: Set the oven to 180C/350F Gas Mark 4.

Mix the first four ingredients in a large bowl then gendy decant into a roasting dish just large enough to hold it all.

Bake for 20-25 minutes until the fruit is just cooked.

Leave to cool.

Serve with a generous dollop of mascarpone.
