Instructions: Combine seasonings in a small bowl and then rub mixture over entire roast. Place roast in a 3- or 4-quart slow cooker. Cut roast in half to fit into cooker, if necessary. Cover and cook on LOW for 8 to 10 hours.
Remove roast to a cutting board, reserving juices in the slow cooker. Let roast stand 15 minutes, cut diagonally across the grain into thin slices. Serve with Horseradish Sauce and, if desired, au jus (with meat juices). Horseradish Sauce: Combine all ingredients in a small bowl; cover and chill, if desired.
