4 lb Caribou roast

1/2 cup Vinegar
2 x Garlic cloves minced
2 tbl Salt
----------------- PASTE ----------------
2 tbl Flour
2 tbl Oil
2 x Garlic cloves minced
1 tbl Brown sugar
1 tsp Prepared mustard
1 tbl Worcestershire sauce
1 tbl Vinegar or lemon juice
Instructions:
Instructions: Marinade the caribou with the vinegar, garlic and salt in a plastic bag, turning occasionally, overnight in the refrigerator.

Remove from the marinade and discarding marinade, pat dry, roll in flour and brown in a little oil in a hot skillet. Make a paste of the remaining ingredients and smear over the roast. Place in a preheated 450 degree oven, reduce the heat to 300 degrees and roast 60 to 80 minutes until finished to desired doneness.

Deglaze the pan and make gravy.

This recipe yields 6 servings.
