Sweet Tamarind Glaze: ----------------
3 tbl tamarind pulp
1/2 cup boiling water
1 tbl garlic crushed
1 tbl ginger juice (use garlic press)
1 tsp hot chili peppers finely minced
(ie, serrano or thai)
1/4 cup rice wine vinegar
2 tbl honey (or to taste)
Instructions:
Instructions: Stir and mash the tamarind into the boiling water and allow to sit off heat for 10 minutes. Strain, pressing solids with a spoon to extract all juices. Combine tamarind with remaining ingredients in a small saucepan and stir over moderate heat until honey dissolves. Cool.
