Instructions: Season the cod with salt and pepper
Mix the breadcrumbs with the coriander garlic lemon zestsalt and pepper add the butter and mix thoroughly with your fingers. Place the cod in a shallow ovenproof dish and press the buttered crumbs firmly on to the fish to form an even crust. Bake at 220C/425F/Gas Mark 7 for 20-30 minutes until the crust is browned and the fish just cooked through. Serve immediately Serves 4 This use of coriander in a breadcrumb crust owes little to exotic locations but is the kind of thing that has become fashionable in Britain over recent years.
