12 clv garlic unpeeled
80 gm butter
40 gm duck fat
2 x sprg fresh thyme or rosemary
Instructions:
Instructions: Take one sheet of kitchen foil and place it in a large roasting tray.

Place dhe cloves of garlic on it and add the butter and duck fat the herb of your choice salt and pepper.

Seal to make litde parcels.

Cook the parcek in dhe oven preheated to 220 degrees C/425.F/gas mark 7 for about 20 minutes.

For the last 5 minutes open the parcels thus allowing the garlic to crisp.

Before serving dry the garlic out on kitchen paper.
