Instructions: Make small incisions in the lamb and insert a piece of garlic and a few rosemary leaves into each.
Season with salt and pepper and place on a rack in a roasting pan. Spoon over the oil. Cook in a preheated moderate oven 180 degrees C (350 degrees F) Gas Mark 4 for about 2 hours. Transfer to a warmed serving dish and keep hot. Skim the fat from the pan juices add the wine or stock and bring to the boil stirring until thickened.
