Ingredients:

3 kg leg of lamb
100 gm unsalted butter softened
ground pepper
1 lrg red onion finely chopped
2 clv garlic crushed
1/2 tsp ground cumin
1/4 tsp ground cinnamon
1/4 tsp ground ginger
1 pch chilli powder
1/4 tsp ground saffron
1/3 cup olive oil
Instructions:
Instructions: Preheat oven to 175 degrees C.
Rub lamb with half the softened butter and season generously all over with ground pepper.

Make spice mix by combining onion and garlic in a bowl with spices then add olive oil and water.

Mix well with a small whisk or fork.

Press half the mixture over buttered lamb.

Place remalmng mixture in a baking dish big enough to hold the lamb comfortably.

Add the rest of the butter to baking dish and place lamb on top.

Leave at room temperature for at least 1 hour before baking.

Bake for 1 l/22 hours basting with pan juices until lamb brown and crisp skinned.
