1 cup dry red wine
1/4 cup vegetable oil
2 x garlic cloves minced
1 x onion coarsely chopped
1/2 tsp Tabasco brand Green Pepper Sauce
Salt to taste
1 x leg of lamb
Instructions:
Instructions: Combine wine, oil, garlic, onion, Tabasco brand Green Pepper Sauce and salt in small bowl. Place lamb in shallow glass, ceramic or plastic dish. Pour marinade over lamb. Cover and refrigerate 6 hours or overnight, turning occasionally.

Preheat oven to 325 degrees.

Place lamb on rack in shallow roasting pan. Roast (slowly) 30 minutes per pound or until meat thermometer registers 175 degrees for medium doneness. Baste occasionally with marinade. Garnish with parsley.

This recipe yields 6 to 8 servings.
