Instructions: Heat pan (oven proof), add peanut oil, heat until almost smoking. Add lobster and roast on top of stove until meat is browned.
Add brandy and flame. Add clam juice, white wine, shallots, clams tomato, parsley and pre-roasted potatoes and corn. Pre heat oven to 400 degrees. Place pan in oven and roast for 10 minutes. Steam claws separately, removing meat from claws and knuckles - reserve. Add butter to pan with lobster after removing from oven. Remove tail meat from shells.
