Instructions: Preheat the oven to 400 degrees. Wrap the beets in a large piece of foil and bake until tender, about 90 minutes. Remove the foil and let the beets cool. Hold the beets under cold running water so the skins will slip off. Cut the beets into wedges. Combine the beets with the olive oil, orange juice, vinegar, salt and pepper in a bowl.
Arrange the greens on each of 4 salad plates; top with the beets. Sprinkle with cheese, chives and almonds. Serve with orange segments. Description: "Dairy" Email this Recipe:
