12 x carrots trimmed, peeled
3 tbl extra-virgin olive oil
1/4 tsp coarse salt
1/2 tsp freshly-ground pepper
2 tbl finely-chopped fresh dill or
Instructions:
Instructions: Heat oven to 400 degrees. If the carrots are thick, cut them in half lengthwise. Slice carrots diagonally into 1 1/2-inch lengths.

In a medium bowl, combine carrots, oil, salt, and pepper. Toss to combine. Spread evenly on a baking sheet, and roast until tender when pierced with the tip of a knife, about 20 minutes.

Transfer to a serving bowl, and toss with chopped herbs. Taste, and adjust for seasoning. Serve immediately.

This recipe yields 6 servings.

Comments: When buying fresh carrots, look for roots that are firm and free of cracks. Leaves, if still attached, should be bright green.
