Instructions: In a medium bowl, toss the chick-peas with the oil to coat. Spread on a baking sheet and bake at 375 degrees for 40 minutes or until brown and crisp (I had to cook them for 60 minutes before they got brown and crisp). Remove from the oven and sprinkle with salt to taste. I used canned chick peas when I made this and it turned out fine. However, dried chick peas that have been soaked and cooked supposedly get drier and crisper when roasted.
