Instructions: I had dinner last night with a friend who served the following on toast, and it was yummy. I dont know the proportions exactly, but I dont think it matters. She just threw it together out of her head. Wish I could do that!

Roasted eggplant + garlic + lemon rind + a few pepper flakes. Serve on toast.

Yummy with some lentil soup.
