2 lb	small fingerling potatoes
6 x	garlic cloves crushed
1 tbl	extra-virgin olive oil - (to 2) for drizzling
	Salt to taste

Instructions:

Instructions: Heat oven to 500 degrees.

Spread potatoes out on a cookie sheet. Scatter garlic over potatoes. Coat lightly with extra-virgin olive oil and season potatoes with salt and pepper. Roast until tender, about 20 minutes.

This recipe yields 4 servings.
