Instructions: Scrub potatoes and pat dry. In a 10- by 15-inch baking pan, mix potatoes, oil, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
Roast potatoes in a 400 degree oven, turning occasionally, until tender when pierced, 35 to 45 minutes. Pour potatoes into a bowl and sprinkle with cheese. Add more salt and pepper to taste. This recipe yields 10 to 12 servings. Email this Recipe:
