3 lb thin-skinned potatoes - (1 1/2" wide)
(a combination of Yukon Gold, red, and purple)
3 tbl olive oil
3 x garlic cloves peeled, minced
1/2 tsp salt - (about)
1/4 tsp coarsely-ground black pepper - (about)
Instructions:
Instructions: Scrub potatoes and pat dry. In a 10- by 15-inch baking pan, mix potatoes, oil, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper.

Roast potatoes in a 400 degree oven, turning occasionally, until tender when pierced, 35 to 45 minutes.

Pour potatoes into a bowl and sprinkle with cheese. Add more salt and pepper to taste.

This recipe yields 10 to 12 servings.
