1 med	russet potato cut 2" cubes
1 med	red potato cut 2" cubes
1 med	sweet potato cut 2" cubes
2 tbl	olive oil
2 tbl	balsamic vinegar
2 tsp	minced thyme
3 x	garlic cloves minced

Instructions:

Instructions: Preheat the oven to 375 degrees. In a bowl, combine all ingredients. Toss well to coat.

Place potatoes in a casserole dish. Roast uncovered for about 40 minutes, until potatoes are tender.

This recipe yields 6 servings.

Serving size: 1/2 cup.
