1 x 4 Bone (220 gm) Kangaroo Rack
100 gm Kangaroo Mince
20 ml Cream
1 x egg white
10 gm Pine Nuts
10 gm Shitake Mushrooms - Sliced pointe
Ground Mountain Pepper
100 ml Game Jus
20 gm Lilly Pillys
Polenta as per pkt instructions
Assorted greens
Instructions:
Instructions: 1. Bind all stuffing ingredients together with egg white, season, roll in aluminum foil and steam for 20 minutes

2. Make polenta and cut when cool - chargrill

3. Seal rack, roast in moderate oven 10-15 minutes rest well

4. Add Lilly Pilly to Jus

5. Saute Greens

6. Slice meat and stuffing and lay off bone onto wilted greens and lilly pilly jus

7. Garnish with polenta and lilly pillys
