Ingredients:
Amount Ingredient
1 med zucchini halved lengthwise,
and cut crosswise into 1/2"-thick pieces
1 x red bell pepper cut into 1" pieces
1 x red onion cut into 1" pieces
1 sm eggplant - (abt 1 lb) cut into 1" cubes
2 tbl olive oil
Salt to taste
Freshly-ground black pepper to taste
1/4 cup golden raisins
1/2 tsp freshly-grated lemon zest
Instructions:
Instructions: Preheat oven to 450 degrees and lightly grease a large shallow baking pan.

In a large bowl toss vegetables with oil and salt and pepper to taste and arrange in one layer in pan. Roast vegetables, stirring occasionally, until tender and golden brown, about 20 minutes.

Stir in raisins and roast 3 minutes more. In a bowl toss ratatouille with zest and juice.

This recipe yields 2 side dish servings.
