Spoon the roasted rock shrimp onto individual plates, with rice alongside, if you like. Serve immediately.

This recipe yields 4 servings.

Comments: Chipotle isnt a variety of chile, but instead the term for smoked - and often marinated - jalapeno chiles. If youre a fan of hot-hot food, you can use jalapeno or serrano chile in place of the Anaheim, or use more chipotle chiles. Good steamed rice is a perfect partner for these spirited shrimp - use basmati, texmati or jasmine rice if you can find it.
