6 x roma tomatoes oven-roasted
2 tbl olive oil
1/2 tsp roasted garlic
3/8 cup cucumber peeled, seeded,
finely diced
1/4 cup oil-packed sun-dried tomatoes
Salt to taste
Freshly-ground black pepper to taste
Instructions:
Instructions: To roast tomatoes, roast in oven with olive oil, salt and pepper at 500 degrees for 40 minutes or until done. Place tomatoes and roasted garlic in a food processor and puree until fine.

Combine all ingredients and season with salt and pepper to taste. Keep refrigerated until ready to serve.

This recipe yields 1 pint.
