Instructions: Take about 2/3 cup of garlic gloves and mash with 1/3 cup coarsely crushed black peppercorns. Add 2 Tablespoons olive oil and enough water or broth to make a paste. Then (you get messy here) rub this paste between the skin and the flesh of the bird, everywhere possible. Leave a coating thin to medium. Roast as usual, very little basting required. People go nuts for this.
