Instructions: Preheat oven to 450 degrees.
Place two pieces of each vegetable on skewers, alternating as desired. Make sure there are small spaces between each vegetable to allow for heat circulation. Brush each assembled skewer with oil and season lightly with salt and pepper. Roast for 10 minutes, then flip and cook on other side for 5-10 minutes, until lightly browned and tender.
