2 to four servings
Ingredients:
Amount Ingredient
2 oz olive oil
1 lb venison loin, cut in 1 1/2 inch-thick pieces
1/2 lb shiitake caps
2 lrg onions, sliced
2 med Fuji apples
2 tbl butter
4 oz marsala wine
Instructions:
Instructions: Rub venison with salt, pepper and thyme. Sear all sides in hot pan with olive oil. Finish in oven to desired temperature. Remove venison from pan, add onions, mushrooms and apples. Saute until soft, then add marsala, butter and thyme to taste.

Makes two to four servings.
