Remove from plastic bag.

Leave netting on Leg.

Pre-heat oven to 350: F.

Place, fat side up, on rack in pan.

Reduce temperature to 325: F.

Cook 28-30 min. per lb. or until meat thermometer reads 150: F. (for medium rare).

Remove from oven, let stand for 5 minutes before cutting.

Cooking Instructions for Grilling:
Remove from bag.

Remove net.

In order to create greater uniformity for grilling, the thicker portions of the Leg should be "Butterflied." (Cut through the thicker portion, almost to edge, and fold back so the shape of the Leg resembles a butterfly when laid flat on the grill).

Grill as you would a steak.

Medium rare is the desired doneness.
