Ingredients:

1/2 cup shortening
1/3 cup brown sugar, firmly packed
1 x egg
1/4 cup milk
2 cup all-purpose flour
1 tsp baking soda
1/8 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cardamom
1 cup raisins
1 cup pecans, chopped
1 cup unpeeled apples, finely chopped
----------------- VANILLA FROSTING ----------------
1/2 cup powdered sugar, sifted
1/8 tsp salt
1/2 tbl milk
1 tbl butter or margarine, melted
Instructions:
Instructions: Cream shortening; gradually add sugar, beating well. Add egg and milk; beat well. Combine flour, baking soda, salt and spices; add to creamed mixture, mixing well. Stir in raisins, pecans and apples. Drop dough by teaspoonfuls onto greased cookie sheet. Bake at 400 degrees for 12-15 minutes. Cool on wire rack; frost with vanilla frosting.

Vanilla Frosting:
Combine all ingredients in a small mixing bowl. Beat until smooth.

Yields 4-1/2 dozen cookies.
