Recipe for Rock Bottom Brewerys Beer Battered Fish

3 cup	pale ale
4 cup	water
2 lb	flour plus
6 oz	flour
2 tbl	baking soda
1 tbl	salt
2 tbl	paprika
4 oz	sugar by weight
2 x	thick salmon steaks
	Cooking oil for frying

Instructions:

Instructions: Combine beer and water in mixing bowl. Slowly incorporate other ingredients until smooth. Be sure to keep the batter as cool as possible.

When ready, cut salmon into individual thumb-sized pieces. Coat fish pieces entirely in batter and let some excess drain. Immerse in pre-heated 350 degree oil until golden brown. Serve with caution, very hot!
