----------------- JACK DANIELS GORGONZOLA SAUCE ----------------
2 oz Jack Daniels whiskey
2 oz water
1 qt heavy cream
2 tbl thyme
9 oz gorgonzola cheese
Salt to taste
Freshly-ground black pepper to taste
----------------- SOUR CREAM MASHED POTATOES ----------------
5 lb Yukon Gold potatoes
4 oz butter
4 oz sour cream
8 oz white cheddar cheese
4 oz heavy cream
Salt to taste
Instructions:
Instructions: Preparation of the Steak: Heat a skillet to medium-high heat. Rub steak with olive oil and sprinkle with 2 tablespoons of Blackened Spice (available in gourmet stores). Sear steak for 2 minutes on each side. Finish in oven to your degree of doneness.

Preparation of the Gorgonzola Sauce: Reduce Jack Daniels and water by half. Add cream and keep reducing it until it coats the back of a spoon. Next add the gorgonzola cheese and let it melt into the sauce. Season with salt, pepper, and thyme.

Preparation for the Sour Cream Mashed Potatoes: Boil potatoes in water until fork tender. Drain Well. In a metal bowl hand mash the potatoes with the sour cream, cold butter, cheese, and cream. Season with salt and pepper.
