Instructions: Wash and dry the rocket leaves and tear them in half.

Remove the stalks of the tomatoes and cut them in half.

Put the dressing ingredients into a jar or bowl and shake or whisk until smoothly blended.

Mix the rocket tomatoes and prawns together and pile into two cups or servingdishes.

Pour some of the dressing over each one and refrigerate for approximately half an hour for the flavours to develop before serving.

Rocket is a salad leaf that was very familiar in Britain in the seventeenth century; it later dropped out of use but recently became fashionable again. Its now readily available and used as it is in this firstcourse salad it adds colour and bite to the mixture. The tomatoes to use are the smallest cherry tomatoes you can find often sold under names like gardeners delight or flavia but the thing to look for is small tomatoes with a bright full colour.
