Instructions: Beat the oil with the vinegar until well blended.
Place the cheese in a bowl and mash until creamy. Gradually add the oil and vinegar mixture beating well to make a smooth creamy dressing. Fold in the chopped chives. Taste the dressing and add salt and pepper if necessary. Cover and chill until required. Roquefort is a distinctive blue cheese with a rich strong and salty flavor. It will probably make this salad dressing suffciently salty for most palates so do not add any extra salt until you have thoroughly incorporated the cheese and tasted the results. Serve with crisp green salads and potato salads. If you cannot get Roquefort substitute another blue cheese. Makes 1 cup Email this Recipe:
