Instructions: Dredge the chicken breast in flour. In a skillet heat 1/4 cup of oil until hot (I used olive oil, but it doesnt matter.) Saute chicken breast, turn once and remove. Add the Vermouth to the skillet and reduce until almost dry. Add the heavy cream, salt and pepper and parsley to taste. Reduce until the sauce thickens. Add tomato slices on top of chicken. Lay avocado over tomato and top with the cheese. Melt in oven and pour sauce over top.
Add a dollop of sour cream on top of the cheese for serving! This is for a single serving, double, triple, or do whatever your hearts desire for larger gatherings! Email this Recipe:
